MAC's Recipe of the Month: Feb 2017

Notes from our MAC Registered DietitianHeart Healthy and Delicious! February is American Heart Month. It also happens to be National Grapefruit Month. In a nod to both, this recipe includes grapefruit (Vitamin C helps the body absorb iron in the spinach) as well as ingredients containing fiber and healthy fats to promote heart health.

Salmon with Winter Salad of Farro, Spinach, Grapefruit & Fennel
Yield:  2 Servings
Total time: 45 minutes

½ lb salmon
½ cup dry farro
1 fennel bulb – thinly sliced using sharp knife or mandolin
4 cups baby spinach
¼ cup chopped walnuts
1 grapefruit
½ avocado
1 tbsp. chopped parsley
2 tbsp. olive oil
Salt and pepper to taste

Preheat oven 425.
In a medium sized pot, boil water for farro and cook according to package directions. When done, drain and set aside.
Use a serrated knife to peel and segment the grapefruit – reserve juice.
Slice avocado.
Whisk juice 1 tbsp. olive oil with reserved grapefruit juice salt and pepper.
Brush salmon with 1 tbsp. olive oil and sprinkle with chopped parsley.
Roast salmon 12 minutes and check for desired doneness.
Toss spinach, sliced fennel, chopped walnuts, cooked farro, grapefruit segments, and sliced avocado with olive oil/juice mixture. Split between two plates.
Top with cooked salmon and enjoy!
