Enjoy the Bounty of the Season with this Simple Summer Salad
June 21 marks the first day of summer! Take advantage of summer produce with a fresh salad to bring to warm weather cookouts. Strawberries and radishes are at their best in June, so throw in these delicious pops of color at every chance!
Strawberry Radish Salad
Yield: 2 Servings (Approximately 1.5 cup each) / Total Time: 15 minutes
2 cups arugula
4 leaves radicchio lettuce
2 tbsp balsamic vinegar
1 tbsp olive oil
Rinse the arugula, radicchio, radishes, and strawberries.
Chop the radicchio, radishes, and strawberries.
Put the arugula and radicchio into a bowl and mix them together.
Place the chopped radishes and strawberries on top.
In a separate small bowl, combine the balsamic vinegar and olive oil and mix together.
Drizzle the balsamic-olive oil mixture on top of the salad.
